For making berry filling, stir together sugar, frozen cranberries, raspberries, dried cherries and orange zest in a sauce pan with one cup of water. Cook it for 15 minutes till it reduces. Chill it by loosely covering it. Next make the vanilla custard. For port syrup combine sugar, port and water in a small saucepan, stirring it occasionally. Let it cool down. Carefully combine the dessert. Cut the cake horizontally and brush the both sides with port syrup. Top it with berry mixture, custard and chopped chocolate.
